Cranberry Sangria

This year I thought I was really on top of things, and then it happened.

Christmas totally snuck up on me!

I don't know if it was because Thanksgiving was so late, but I feel like it is way too soon for the holiday to be upon us.  How is it only 3 days away?

I'm thinking this whole working thing is really starting to get in the way of my personal life.  Too bad I only have, oh, about 40 more years to go.

Speaking of work, last weekend I hosted a brunch with my girlfriends from my first job out of college.  Hard to believe that was almost 9 years ago already!  We try to get together at least once a year around the holidays, and if possible once in the summer.

The weather was, shall we say festive... a pretty dusting of snow, that held off enough to allow for their safe travel from New York and North Jersey.  We enjoyed a nice spread of coffee cake, pumpkin muffins, quiche, maple-coated bacon, and chopped greek salad.  Not to mention cranberry sangria.

I'm not a big drinker but I am usually a sucker for  a good margarita, and a good glass of sangria.  I like that this one had cranberry for the holiday.  Not too sweet or heavy, but it will still put a little jingle in your bells.

I totally could have used a glass (or three) of this a few weeks ago, when I was trying to get a photo of Mini for our family Christmas card.

This child does not sit still - not for one second.  True definition of "Ants in the Pants."

I need one of those high-speed cameras just to have a prayer of getting a shot that is not a complete blur.

Somehow I managed to capture a few gems - but it certainly wasn't easy!

In any event, amidst all the craziness that often accompanies this season, I hope you can take some time to relax (preferably, with a glass of cranberry sangria.)  Whatever you do - please, please, please just enjoy your holidays!!

Cranberry Sangria

  • 1 bottle (750mL) dry red wine
  • 1 C. cranberry juice
  • 1 C. orange juice
  • 1/4 C. brandy
  • 1/3 C. Triple Sec
  • 1 orange, thinly sliced
  • 1 lime, thinly sliced
  • 1/3 C. fresh cranberries, some crushed

Combine all liquid ingredients in a large glass pitcher.  Add fruit.  Chill 2-8 hours before serving.

Cranberry Spice Infused Vodka

Ok so how is it nearly Christmas already?

I know I always say how time is flying, but seriously... nothing makes the time go faster than taking care of a baby!

Which is kind of funny considering every day is like Groundhog Day.  Basically they sleep, eat, poop, repeat... and inevitably your day is centered around that.  Nothing new to the moms out there, but to anyone who doesn't have kids yet - yes, it's really true.  Of course there is some slight variation, but essentially every day is the same.

The first few weeks are SUPER rough (or at least they were for me) and you think "Oh I'm home from work, I should be doing so much stuff."  And then you do none of that stuff, because it's amazing how time consuming sleeping, eating, pooping & repeating can actually be!

However, life is starting to mellow out in the Vittles household and before I know it, I'll be back to work.  And probably crying that I won't see my little monkey all day... and that she's growing up & changing so fast. (Yes I know she's only 8 weeksold,  but when it's YOUR baby they really do change incredibly quickly).

Speaking of Miss Mara.... I do have to take a moment to brag about how stinkin' cute she is. Check out a few of her professional pictures I mentioned last post (by Sarah Fuller, of Purple Circle Photography):

FYI, my mother-in-law knit her that fabulous stocking (may as well brag about that, too, while I'm at it!)  And yes... it is actually big enough for her to fit in.  Santa will have his work cut out for him filling that bad boy!  Thanks Gigi :)

In any case... since things are calming down, I've had a chance to make some of my homemade gifts for friends & family.  My favorite this year is this Cranberry Spice Infused Vodka.

I'm not much of a drinker, but I'm still kind of a sucker for all those flavored liquors that seem to be cropping up at the store.  At Thanksgiving I saw a pumpkin spice liqueur that I wished I could drink (and now I could, but let's face it, Pumpkin Spice is spent til next year).

So when I saw an idea in Country Living magazine for infused vodka, I started searching for other interesting recipes.  I came across one for the Cranberry Spice on About.com, and changed it slightly to suit the containers I bought.  (If you're wondering, I bought 16 oz. swingtop glass 'flask' bottles, and made labels on my computer - the below recipe was enough to fill two bottles.)

Super fun for the holidays!

Cranberry Spice Infused Vodka

  • 32 oz. vodka
  • 1 1/2 C. fresh cranberries
  • 8 whole cloves
  • 1 whole nutmeg, cracked
  • 1 whole vanilla bean, cut in half
  • 1 1/2 sticks cinnamon, cracked
  • 9 whole allspice berries, cracked

Place cranberries & spices in the bottom of a large pitcher or container (I used a large, widemouth mason jar with a lid) and pour vodka over them. Cover & let steep 3 days, then strain & discard berries/spices.  Place liquor in decorative containers, if desired.

Apple Cider Ginger Punch

I know I just posted an apple-related recipe, but let's be honest.

Fall is my favorite season, and I have no self control.

I heard a commercial for Dunkin' Donuts' pumpkin products on the radio the other day that made me laugh.  This guy goes to order, and finds out the pumpkin flavor is only available for a limited time during fall.  So he wants to load up on pumpkin donuts & muffins... in some random lady's purse and also some other guy's briefcase.  Plus a dump truck for the coffee.

You kinda have to hear it to find it amusing, but I was thinking OMG, that's so me.

I tend to go a little overboard during fall.  I want to make everything pumpkin & apple.

I've been able to restrain myself fairly well thus far, but I can't sit on this drink any longer.  It's too good.

If you've never had ginger beer, it's a non-alcoholic beverage that's really just ginger ale with lots of ginger.  My dad & my stepmom introduced me to it, apparently it's popular in Bermuda.  I found this Jamaican kind in our local grocery store.

I was having trouble deciding if I liked this better with vodka or spiced rum, though.  I eventually decided on vodka.  But tell me what you think?

Apple Cider Ginger Punch

  • 2 oz. good-quality vodka
  • 2 oz. apple cider
  • 4 oz. ginger beer
  • club soda (I actually used unsweetened pomegranate seltzer)
  • apple slices (optional)

Combine vodka, apple cider, and ginger beer.  Pour over glass filled with ice.  Top off with club soda & apple slices, if desired.  Makes one drink.

Coconut Rum Horchata

So on my way home from work today, I got into a car accident.

Really it was just a fender bender - both cars were completely drivable, and thankfully no one was hurt.

And, it was in no way my fault.

Yessssssssssss.

(Just sayin'.)

But get this - I was hit by a woman making an illegal left turn into a Dunkin' Donuts.

Who, as it turns out, did not even have a license to drive a car.

I guess she really needed some donuts?

I can kinda relate though.

After waiting an hour in the heat, humidity, and impending thunderstorms for the officer to do his thing, I was wishing like Cher that I could turn back time and pour me some of this coconut rum horchata I made over the weekend.

I mentioned I had something up my sleeve for "Rum Day" at the beach, and let me tell you - this drink did not disappoint.

If you've never heard of horchata, it is a traditional sweet Mexican drink made with rice and cinnamon.  Which sounds kinda weird, but trust me when I say it basically tastes like rice pudding in liquid form.

Now I honestly have no idea how 'traditional' the original recipe is that I adapted, but I decided to take it to another level and use coconut milk & coconut rum.

Holy smokes.

Even people who said they do not like coconut thought this drink was awesome.

FYI - it's also quite scrumptious without the rum, so don't feel compelled to add it.

Unless you had an afternoon like mine.

In that case, feel free to double the amount!

Coconut Rum Horchata

  • 1 C. uncooked long grain rice
  • 2 quarts warm water
  • 1/2 t. ground cinnamon
  • 1 C. coconut milk
  • 1/4 C. fat free half & half
  • 1 (14-ounce) can sweetened condensed milk
  • 1 1/2 t. pure vanilla extract
  • 1/2 C. coconut or light rum, or to taste (this is optional – drink is great virgin!)

Mix the rice and warm water together in a bowl, and let stand for half an hour. Reserving the water, drain, and place the rice in the bowl of a food processor. Add the cinnamon and process until a paste forms. Return the rice to the water and let stand at least 2 hours, stirring occasionally as the water turns milky white.

Strain the rice through a very fine sieve (I used a coffee filter) into a bowl or pitcher, and discard the solids. Re-strain liquid to ensure all particles are removed.  Stir in coconut milk, half & half, condensed milk, vanilla, and rum (if desired) until evenly blended. Refrigerate at least 2 hours before serving.

To serve, divide ice cubes between eight glasses, and pour the chilled horchata over the ice.  Serves 8.

Triple Citrus Margarita

Ok so as some of you may have noticed, V&B is now on Twitter.

Which is probably no big deal to you, but for me... huge.

You see, I don't tweet.  Or at least I didn't until last week.  Because I know nothing about it.

And to be honest, I still don't really get it.  But I'm learning.

I signed up and then I was like.... ok now what?

I had to actually utilize the help section to see what I was supposed to even be doing.

I had to actually Google things like "RT" and "#FF" to see what those abbreviations meant.

Sad, I know.

My husband has a running comment about my blogging habits, where if I am on the computer for a while he'll ask if I'm 'vittling and bitting.'

Well last week I think I spent more time twittling than vittling.

Maybe it's karma for making fun of my dad, who for many years did not understand how to text message.

(FYI, he got over it, and now he goes crazy with the texts - "Enjoy ur weekendz, love 2 u both" was a text he sent to me & Mr. V last week.  Umm... what?)

Or maybe it's karma for laughing hysterically at my grandmother Yaya Vittles, who was about to open a large box from her children at Christmas and actually prayed "Please, Lord, don't let it be a computer - I'm too old to learn anything new."  (It was a CD player, not a computer).

And here I am...puzzled over Twitter.

Karma's a b*#$@^ isn't it?

At times like these, what really helps soothe the nerves is a nice adult beverage.

I'm actually not much of a drinker, however I am a sucker for margaritas.  One night a few weeks ago we were out with some friends and the margarita I ordered came with an orange slice in it.

It was delicious.

So when I found a margarita recipe a few days later that had not only a splash of OJ but also limoncello in it (why do you think I had limoncello available to make my strawberry shortcakes??) I was definitely intrigued.

I had to pick up a few items from the store, but I couldn't wait to make it.  And let me tell you, I was not disappointed.

I tweaked the recipe to my taste, but the limoncello & orange juice are definitely a nice twist.  And although Mr. V doesn't typically like mixed drinks, he was surprised at how good this was.

A couple of these and... Twitter who?

Triple Citrus Margarita

  • 3 oz. fresh lime juice (about 3 medium limes)
  • 2 oz. limoncello
  • 3 oz. triple sec
  • 1/2 C. 100% agave tequila
  • splash orange juice
  • 1 to 2 t. agave nectar (optional)
  • salt & lime zest of 1 lime, for garnishing rim of glasses (optional)

Set out two serving glasses.  If using zest, zest one of the limes and mix zest with salt on a small plate.  Cut a slice from the lime, and slit segment horizontally- place over rim of one of the glasses, and run around the edge.  Dip rim of glass into salt & zest mixture.  Repeat with other glass.

Place ice in cocktail shaker.  Add fresh lime juice, limoncello, triple sec, tequila, agave nectar (if using) and orange juice and shake to combine.   Serve in glasses straight up (or on the rocks), garnished with orange and/or lime slices if desired.  Serves 2.
